Roast Beef with Mustard Glaze and Potato Bake

Serves: Four - Six

Time to cook: per 450g (1lb)

Rare          - 20 mins per 450g (1lb) + 20 mins
Medium     - 25 mins per 450g (1lb) + 25 mins
Well Done - 30 mins per 450g (1lb) + 30 mins

Oven Temperature: Gas Mark 4-5, 180°C, 350°F


Take....

Beef topside joint, potatoes, onion, garlic, stock, black pepper, honey, wholegrain mustard, oil

Make....

Place 900g (2lb) potatoes, peeled and thinly sliced, 1 onion, thinly sliced and 4 cloves garlic, thinly sliced, into a large roasting tray. Pour over 150ml (¼pt) stock and season with black pepper.

Place a 1.25kg (2½lb) lean beef topside joint on top of the potatoes and open roast in a preheated oven for the calculated cooking time. If you have a larger joint watch the potatoes don't catch during the cooking time, cover with foil if necessary.

15 minutes before the end of cooking time mix together 15ml (1tbsp) honey, 15ml (1tbsp) wholegrain mustard and 15ml (1tbsp) oil. Glaze the beef joint and return to the oven for remaining cooking time.
